Assuming you want hardy, well-rounded thralls that can hold their own in melee, an average Berserker trained and perked for Vitality will end up with around 40-45 Strength and 10-15 Agility and be wearing Strength bonus armor. In decent Strength gear they'll have around a 65% Strength Damage Bonus and a ~10% Agility Damage Bonus.AOC T9 thralls have a bit more HP than a well levelled meruvian and do more damage but seem to take more of a beating than meruvians.
